Turkey Black Bean Chili

Cook time: 2-3 hours

This is one of my favourite things to make in the fall and winter. It’s cheap, easy and healthy. And you can make it while your little one plays with spoons in the kitchen! It took my only 20 mins to throw together, and then I let it cook until daddy came home and it was dinner time.

One of the other things I love about this chili is that often, I can throw it together with things I already have in my house. I’m usually only looking for ground turkey at the grocery store. And as with ALL the meals I make – no ingredients are mandatory. Most of my meals can be made with a variety of items, so you can make it suit your families taste. I will

Ingredients:

1 onion (I used a red one), coarsely diced
1 green pepper, chopped
Garlic
Chili Powder (4-5 tablespoons, based on taste.)
Cumin (1 tablespoon or more to taste)
Red Chili Flakes to taste
Salt & Pepper
0.75-1lbs ground Turkey
1 large can of tomato sauce
1 can tomato paste
1 large can diced tomatoes – juices in
2 cans of black beans
2 cans of red kidney beans
1 can of white kidney beans
1 can of corn nibblets
No Fat Yogurt

In a large pot, sauté onions and crushed garlic in a little bit of olive oil until they start to turn clear – around 5 minutes. Add turkey and cook through. Stir in green pepper and cook 5 more minutes.

Now the hard part is over. While your meat is cooking, you can open all your cans and drain your beans. We’re saving time, remember?

Locked and loaded:

Once the meat is cooked and the peppers have been stirred in, you can add all the cans of beans, tomatoes and tomato paste, except the corn. Notice my mishmash of cans? Like I said, I pulled most of it out of the cupboard.

Stir ingredients together:

Once you’ve mixed your beans together, you can add your spices:

Stir and voila! Mostly done! And it took just over 20 minutes:

5 minutes before serving, stir in the can of corn.

Serve with a dollop of non-fat yogurt and ENJOY! (uh we eat on the coffee table, please mind the giant pack of wipes underneath the picture of food. D’oh!)
